Vinification: Traditional in stainless steel at a temperature of 28 ° C, frequent pumping over. Maceration of 20-30 days to obtain a fresher and more immediate consumption product despite the structure allowing a life of more than 15 years.
Aging: 8-9 months in 500 liter Allier tonneaux used for a long time.
Characteristics: Delicate rose bouquet with bold red fruits and balanced acidity.
Suggestions for consumption: Grilled beef, roasted chicken, salame, parmesan reggiano
