Vinification: cold decantation and clarification of the must (10 ° C), subsequent fermentation at 17-18 ° C to maintain the typical aromas of the vines and yeasts and finally a long stay on the lees until spring. After bottling, the wine rests for about 3 years before being put on the market.
Characteristics: The color is pale straw yellow with greenish reflections. The scent is floral, initially citrusy, and then turns sharply to hints of minerals and hydrocarbons. The high acidity maintains its characteristics unaltered for many years, the flavor is fresh, very complex with notable minerality.
Suggestions for consumption: Wonderful with seafood, spicy dishes, soft cow cheeses or as an aperitif. It is a long-aging white, it evolves in a surprising way and reaches the apex of complexity after 7-8 years of bottling.
